The award-winning chef Victor Borg took over the helm of Grain in 2019. Previously, he worked in renowned restaurants such as Gordon Ramsay’s Aubergine and the two-Michelin-star Bagatelle. Under his leadership, Under Grain earned its Michelin star just five months after opening in 2020, which has been confirmed in the subsequent years. The sister restaurant Grain Street was awarded a Bib Gourmand in 2022, making Grain the first Maltese brand with two Michelin-starred restaurants.
